The difference between compotes and jams lies in the quantity ratio between sugar and fruit: compared to jams, fruit prevails in compotes and the quantity of sugar is reduced. They are therefore "composed" almost only of fruit, which is completely blended and homogeneous, without lumps or pieces of residual grits, thus becoming a full-bodied and easy to spread cream.
INGREDIENTS: white figs (84%), cane sugar, lemon juice; citric acid.
