The Vegetable sauce is like Morgan's sauce but with the chlorophyll of parsley and green celery in evidence. It is a rustic beaten of vegetables worked completely by hand, gently cooked in oil to obtain a tasty accompanying sauce that is versatile and balanced at the same time.
INGREDIENTS: parsley, carrots, cauliflower, fennel, white onion, yellow peppers, red peppers, celery, curry, white wine vinegar, water, sugar, Cervia salt, extra virgin olive oil and sunflower oil.
PAIRING: it is ideal to accompany boiled beef, hard-boiled eggs, anchovies, cheeses with a flowery rind, robiole or fresh goat.
