Traditional balsamic vinegar, aged 12 years
The Traditional Balsamic Vinegar of Modena, protected by The Consorzio Tutela Aceto Balsamico Tradizionale di Modena, is a millenary condiment which, since 2000, is protected by the European Union D.O.P (Protected Denomination of Origin).
In Order to comply with the strict D.O.P. protocol, The Aceto Balsamico Tradizionale di Modena, can be obtained only from grape must belonging to the grapevines of Lambrusco, Ancelotta, Trebbiano, Sauvignon, Sgavetta, Berzemino e Occhi di Gatta which are grown up in the provinces of Modena and Reggio Emilia.
The product aging have to be run in wooden barrels of decreasing sizes for a period which range from 12 to 25 years.
During this time, the barrels, set in batteries of different woods, are kept in attics where seasonal climate variations allow, year after year, transformation of the grape must in the precious Aceto Balsamico Tradizionale di Modena.
The product, which can bottled only in the exclusive round shaped bottle, designed by Giugiaro, is available in two versions:
White cap: aged for minimum 12 years Extra aged –
Golden cap: aged for over 25 years
